Together you will make a batch of macarons and their fillings from scratch, including making Italian meringue, using egg albumen, sugar, chocolate ganache and fruit gel recipes. You will fill and finish your own batch of macarons to take home, along with a Jacican Macaron recipe booklet.

This class is suitable for beginners as well as advanced cooks who wish to learn new skills and techniques. You will learn that macarons are not as hard as you think to bake. Pastuso Executive Chef Alejandro Saravia will host Renascence Gippsland in conjunction with the Melbourne Food and Wine Festival 2017.
This unique event is an opportunity to dine al fresco at Biring Biring Farm in South East Gippsland, feasting on produce sourced only from the South East Gippsland area.
'Renascence' means 'to revive'. Saravia's regional lunch celebrates this motif by bringing guests back to basics and close to the source of food for an outdoor feast.
Enjoy a special dining experience overlooking Wilsons Promontory at the farm, which is part of Gippsland Natural Beef - Australia's only carbon-neutral beef producer.
The beautiful setting will see guests seated at communal tables to enjoy a menu created using locally sourced produce cooked over an open fire, including sumptuous grilled meat from Gippsland Natural Beef.

The menu features produce from other passionate local farmers including Amber Creek Farm, Mirboo Pastured Poultry Farm, Pangrazzi Cheese and Aherns Fruit Market and Fine Foods.
Saravia will share his expertise in Peruvian flavours, ingredients and cooking techniques while other chefs will also be invited to share their stories in flavour from the South Gippsland region.

The winter growing season produces a great range of vegetables that can be preserved in various ways. This class teaches you the basics of home fermentation where you make your owe Kimchi, Sauerkraut and fermented beets.

This will be followed by winter jam, marmalade and pickles. You will make Giardiniera pickles, Rhubarb jam and Lemon marmalade. Before you can make your preserves, together you will pick the fruit need from the Jacican vegetable garden, as well as fresh vegetables that will be used to make your lunch. Guests divide the day haul between them and take home their bounty.

This class is suitable for beginners as well as advanced cooks who wish to learn new skills and techniques. You will learn techniques that you can use to impress everyone with your creative cooking abilities.

While you cook, a light lunch, using produce from the garden and local supplies will be served. The class can be offered as a private class for groups of six guests, dependent on availability of seasonal produce.

'I love to 'rescue' old pieces of metal, wire and discarded household items and give them a new life. My first love was jewellery making and gradually I moved onto to creating larger sculptural pieces. I enjoy combining objects and materials that are not normally used together. This creates a new visual story with interesting surprises. My methods of construction are simple but require some thought to achieve the desired results. Most of my materials are sourced from op shops , garage sales and second hand yards. I like to think of my work as quirky, whimsical and fun. I work from my studio in Inverloch in South Gippsland , Victoria and I also conduct workshops in jewellery making and wire sculpture.

TERM ONE SCHOOL HOLIDAY DISCOVERY PROGRAM – WILSONS PROMONTORY NATIONAL PARK
Parks Victoria’s Discovery program encourages children and adults to explore Victoria’s parks with a ranger.
Programs run every school holidays across the state and include a range of interactive and fun activities.
Highlights of the Term One School Holiday Discovery Program include opportunities to:
•Meet a modern day lighthouse keeper to discover the history of Wilsons Promontory Lightstation and hear first-hand what life is like at the remote and rugged southern end of the Prom.
•Learn about the threatened shorebird, the Hooded Plover and help us to monitor them.
•Visit the Nursery and help the Friends of the Prom Nursery Group with some of their Autumn tasks.
•Come and try fishing with Fish Care and learn how to become a sustainable angler.
•Join a Ranger for some hands on activities to help in the conservation of our park.
• Learn about the life of the threatened Long Noosed Potoroo for children aged 3-5 years.

Irene McConville's water colour / mixed media exhibition will be held at the Leongatha Gallery, cnr McCartin Street, and Michael Place, Leongatha during May, with an opening event on Sunday 7th May between 2.00pm and 4.00pm. All welcome!

Irene has of late been working with the many 'wonderful materials available' and is currently experimenting, and we mean 'experimenting' with water colours and some mixed media to create her desired effects. If we were able to peek into Irene's mindset, we would discover that she believes that in painting 'there are no rules', and this is the key to her newfound painting freedom.

Funky ALL-WEATHER Market, Kongwak comes to life with a fabulous variety market every Sunday, rain, hail or shine with indoor and undercover stalls selling a selection of vintage/retro and second hand home wares, clothing, albums, art, jewellery, local produce, plants, books, live music, great food and coffee plus a fun atmosphere.
